Makin' lunch out of nothin' at all

It was one of those days.  We had nothing in the house to eat.  Well, we had nothing in the house that was purchased with a specific intention.  We had leftover bits of this and that from a week's worth of groceries.  And I did it.

I went all grandma!

You see, our grandparents were masters at wasting nothing.  They made something out of nothing all. the. time.  Thus:  soups and casseroles!  They never ran out and bought something new if the old thing could be fixed or tolerated.

I didn't want to go to the store and have to rush.  I had six humans to feed for lunch.  I was feeling very determined.  Stand back and be terribly impressed.

olive Oil
shredded carrots
can of black beans
can or northern beans
bag of spinach leaves
leftover containers of salsa from a taco run

Sauteed all of that.  Threw out some corn tortillas and a jar of Tabasco.  BOOM!

The kids raved.  Said it was one of their favorite meals.  Go figure.

It was a good reminder to me.  So many times we think we have no choices.  No options.  Nothing we can do.  Yet, I could write a book on the times in my life I've had to make something out of what I thought was nothing.  I've had to move forward when I thought I couldn't.

A life lesson in lunch.  There ya' go.  Tune in tomorrow when I make a profound comparison between universal energy and poo.

Or not.

Let's all really hope for NOT.

Make sure you tag this one under "eating and living less crappy."

My kids have learned that there are two results from making lunch/dinner out of nothing at all.... either it's fabulous or it's dumped and we eat popcorn.

Either way, they like to sit back and watch me go.

Okay, you don't know me but I have to say...

Did you just make an Air Supply reference?

I L.O.V.E. when I have to do this! Really makes me feel so 'pioneerish'. It's fun. Master of the universe... Well, the table, anyway!

I know just how to whisper and I know just how to cry. :)

It's a "make dinner out of nothing at all" night at my house :-)

And now that song will not leave my brain. Actually, I don't even really remember what you blogged about.

Thankfully ...

Oh my that seems to amaze me! Food is a trigger for me. ANY type of food prep overwhelms me. With four kids I don't have the luxury of giving in to this trigger. We cannot order food every time I am having a rough day. But still this kind of on the fly thinking about food - I would have been huddled in a corner crying when my husband got home. :)

oh Christine, your posts always make me smile! that really is quite inspiring and profound what you said about making something out of nothing. I like that. That really made my day.

Christine!! I love that you made something out of nothing. If there is anyone that could totally do it, it would be you.

On a totally same note, I had a friend over and I had NO idea what to make for lunch. I was in the mood for yummy. We pulled together the MOST amazing wrap ever that happened to be vegetarian...I am not a veggie yet. LOL! But the wrap was amazing.

Now I want to eat.
