Makin' lunch out of nothin' at all
I went all grandma!
You see, our grandparents were masters at wasting nothing. They made something out of nothing all. the. time. Thus: soups and casseroles! They never ran out and bought something new if the old thing could be fixed or tolerated.
I didn't want to go to the store and have to rush. I had six humans to feed for lunch. I was feeling very determined. Stand back and be terribly impressed.
can of black beans
can or northern beans
bag of spinach leaves
leftover containers of salsa from a taco run
Sauteed all of that. Threw out some corn tortillas and a jar of Tabasco. BOOM!
The kids raved. Said it was one of their favorite meals. Go figure.
It was a good reminder to me. So many times we think we have no choices. No options. Nothing we can do. Yet, I could write a book on the times in my life I've had to make something out of what I thought was nothing. I've had to move forward when I thought I couldn't.
A life lesson in lunch. There ya' go. Tune in tomorrow when I make a profound comparison between universal energy and poo.
